白酒催陈技术的研究进展

Research progress on aging technology of Chinese Baijiu

  • 摘要: 白酒作为我国特有的酒品种类,在国内的消费市场中占据着巨大的份额,但自然陈酿下的白酒需要经过很长一段时间的贮存才能使酒体变得醇厚稳定,投资成本高,因此,加快白酒陈酿具有十分重要的意义。综述了白酒陈酿机理、基于物理和化学等方法的白酒催陈技术及白酒年份测试方法,并对白酒催陈技术的研究前景进行展望,为白酒的陈酿研究提供理论依据。

     

    Abstract: As a unique type of liquor in China, Chinese Baijiu occupies a huge share in the domestic consumption market. However, Chinese Baijiu under natural aging needs to be stored for a long time to make the liquor mellow and stable, and the investment cost is high. Therefore, it is of great significance to accelerate the aging of Chinese Baijiu. In this paper, the aging mechanism of Chinese Baijiu, the aging technology of Chinese Baijiu based on physical, chemical and other methods, and the methods of testing the age of Chinese Baijiu were reviewed. Besides, the research prospect of the aging technology of Chinese Baijiu was discussed, providing a theoretical basis for the future research on the aging of Chinese Baijiu.
